It's 2010, Happy New Year: Dont Forget Your Black Eye'd Peas

No not the group, the food, I'll get to that in a second.

HAPPY NEW YEAR EVERYONE, it's 2010!  I don't know about you guys but I'm pretty sure we're all ready for a fresh start.  I'm not going to rehash last years lows or highs, whats done is done, lets move forward.  I've made no big resolutions but I did promise myself I'd try/push myself hard and live my truth.  I decided a week ago that I would be happier if stayed on course following what made me happy and continuing to give more and consume less. NOW that doesn't mean I'm going to stop buying a new outfit or tech toy here and there BUT I will give more or each time acquire something new. I wont preach on this but I'll finish this thought by saying the more I've given, the more I've been gifted and I asked for NOTHING! 

Ok Black Eyed Peas! Now, if you don't know that you're supposed to eat Black Eye's Peas on New Years 1) WHERE THE HELL HAVE YOU BEEN 2) You'll want to print this.  Most people don't like BEP's because they're usually over cooked and bland NOT MINE.  BEP's are pretty easy to make and easy to fab(ulous) up.  Heres what you need:


*Bag of Black Eyed Peas
1 Can of Chicken Broth or Stock
1 Can of Stewed Tomatoes (I prefer Hunts Fire Roasted Diced with garlic)
1 Package of Ham Chips, Country Ham Slices or Bacon (Bacon as a last resort)
1 Tablespoon of Seasoning Salt, any brand (I ain't naming a brand till I get a check)
1/2 Tablespoon of Crushed Garlic
1/2 Tablespoon of Cracked Black Pepper
1 Tablespoon Extra Virgin Olive Oil
Green Onions 
2 1/2 Cans of water (you can additional as needed while cooking)

Preparation is easy
Heat up your pot with a little olive oil.
While your olive oil is heating up cut up your ham (use kitchen scissors its faster) into small bite sized pieces.
Throw them in the hot oil and turn till the outsides are done.  
Immediately add the chicken broth (or stock), seasoning salt, tomatoes and water then bring to a boil.
Add the Black Eyed Peas, cover and reduce to a slow simmer.
Wash the kitchen scissors and cut up the green onions and set aside.

Cook on a slow/steady simmer till the peas are TENDER not MUSHY!
5 minutes before you remove the dish from the heat add the onions, stir and recover.
Serve as a stand alone or side dish.

*Canned or frozen Black Eyed Peas are fine if time is an issue.  Dont waste your leftovers, steam some shrimp, brown your favorite sausage (I prefer spicy Italian) add to whats left and you got Black Eyed Peas The REMIX!
